Valentine’s Double-Chocolate Mocha Pancakes

It is such a beautiful day here in Boston. We woke up to sunshine and blue skies 🙂 To start the day off on the right foot, I got Z the perfect present to use for all of our pancake days:

This week is Z’s week to choose the pancakes for pancake day. I have said before that I don’t have a sweet tooth, but Z is a complete chocoholic! He made the most amazing pancake invention: Double-chocolate mocha pancakes. If you love chocolate, you will love these! Plus they were perfect for Valentine’s Day, the ultimate chocolate holiday.

Double-Chocolate Mocha Chip Pancakes

1 serving of your favorite pancake mix (we used up the rest of our Gluten Free Pantry mix…yum!)

1 packet Swiss Miss hot chocolate

2 oz dark chocolate chips or shavings

1/2 cup strongly brewed coffee

1/2 teaspoon baking powder

To your pancake batter, add the Swiss Miss, baking powder and dark chocolate chips. The batter will become very thick, almost like chocolate pudding! Slowly add in the coffee, mixing it back to the usual pancake consistency. You may need more or less coffee, depending on your pancake mix.

As these cook, your kitchen will be filled with chocolate and coffee amazingness! I may not be a huge chocolate fan, but coffee can win me over every time! We kept them in the oven as we continued  to make them.

As Z was doing the flipping (while wearing his new apron, of course!) I set the Valentine’s table.

These pancakes were decadent! The coffee made the chocolate flavor even stronger and richer. The cakey parts were more subtle than I thought, with just hints of chocolate and coffee throughout, but when you came upon a dark chocolate surprise, the richness went “yum!” in your mouth! I wasn’t a fan of the syrup with them, and if we made them again I might whip up some fresh cream or put some creme fresh on top to balance out the richness. I could only eat two small ones they were so indulgent, but man, what awesome pancakes! A definite dessert kind of breakfast 🙂

I am making dessert tonight while Z is cooking up a steak dinner, complete with champagne and red wine! More details to come later.

    Were you guys in my head this weekend as I was whipping up chocolate espresso pancakes? Seriously! I don’t think I’ll be blogging them because it was an adaptation to a super healthy pancake recipe that turned out just so-so. But how funny is that!
