Love Your Leftovers: Miso, Mango, and Chicken Salad

Cooking with leftovers doesn’t have to mean you are eating the same thing two nights in a row. In fact, I hate eating the same dinner multiple times a week. Variety is the spice of life, after all.

But planning to have useful leftovers, like last night’s chicken, is a different story. Having pre-cooked staple foods means you don’t have to depend on the same grains, spices, and veggies from Tuesday. Plan ahead and you can subtract 45 minutes waiting on a hot oven (when all you want is a margarita in this 90* heat) and add an entirely new dish in an instant. Sounds like good math to me!

This salad is a completely different way to eat last night’s chicken. Fresh and spicy, Z and I ate it with two forks out of a giant bowl. So good.

Plus, I didn’t even have to cook tonight. And Z is happy our kitchen hasn’t turn into a sauna. Though that would have been a good excuse for a margarita.

Miso, Mango, and Chicken Salad



2 pre-cooked chicken thighs, chilled with skin removed

1 head Romaine lettuce

1 tomato

1 mango

1/4 cup fresh parsley, chopped

1 tablespoon sesame seeds

For the Dressing (adapted from Eater Not a Runner)

1 tablespoon red or white miso

1 tablespoon honey

1 tablespoon rice vinegar

1/2 tablespoon white vinegar (I used white balsamic)

1 teaspoon Worcestershire sauce

1 tablespoon lemon juice

Roughly chop the lettuce, tomato, and mango into similar sized pieces. Mix all of the salad ingredients together.

Mix all of the dressing ingredients together. Add a little more honey if too tart, a little more lemon or vinegar if too sweet.

Toss everything in a big bowl.

Next time, I’m not sharing and eating the whole bowl myself.

    There’s seriously nothing better than a juicy fruit thrown into a chicken salad. And mango is such a good idea!! That looks delicious ๐Ÿ™‚

    This salad looks awesome. I’m a huge fan of new ways to use not just leftover chicken, but leftover miso! I usually buy miso, use it for one recipe, and then it sits in the fridge until I throw it away. I’ll have to make this. Thanks!

    Amanda was right, your blog is great! I love that you have a similar concept as me when it comes to leftovers. I try to make up interesting dishes in order to incorporate leftovers and add variety to my meals. This chicken salad sounds fantastic!
